This crab stuffed mushroom recipe has no filler or breading making it a perfect low carb, gluten-free appetizer even for those on Keto diet!
Low Carb Crab Stuffed Mushrooms

Crab Meat, White Mushrooms, Mayonnaise, Parmesan Cheese and Butter makes a delicious Low Carb Crab Stuffed Mushroom recipe.
- 8 oz – Crab Meat
- 8 oz – Cremini or White Mushrooms (stems and gills removed)
- 1/2 cup – Mayonnaise
- 3/4 cup – Parmesan Cheese
- 1 tsp – Parsley
- 1 tsp – Old Bay Seafood Seasoning
- 1 – Egg (beaten)
- 1/4 Stick Butter
Jumbo Blue Crab: 1 large blue crab (about 85 gm) yields 87 calories from 1.4 gm fat. It has 0gm carb and is a good source of potassium (277 mg)
Mayonaise: 100 gm yields 680 calories, 75 gm fat, 0 gm carb, 1 gm protein
Cremini Mushrooms: 100 gm yields 16 calories, 3.10 gm carb, 1.8 gm protein
This crab stuffed mushroom recipe only takes a few minutes to make and a few ingredients. So let’s get started.
I have used Chesapeake Bay Jumbo Lump Crab Meat as this is the best quality of crab meat in my opinion. If you cannot get it, use any other kind of crab meat you can afford.
Take crab meat in a bowl and add mayonnaise, Avoid using light or fat free mayonnaise for this recipe
Add Parmesan Cheese to the mixture.
Add chopped parsley and then old bay for seasoning
Gently mix all the ingredients together with a spoon taking care not to break up the lumps any more than necessary.
Next add one beaten egg to the bowl and mix it well with all the ingredients.
Cover it and refrigerate while you prepare the mushrooms.
I have used 8 oz of Crimini mushroom; you can use any mushrooms you like. Remove the stems and scoop out the gills.
Next take a spoon and pack the filling in each mushroom overstuffing it.
Place each of this stuffed mushroom in a pan. Put some pieces of butter into the pan or you can pour some melted butter also.
Now top it with little more parmesan cheese.
Put the pan on the oven or grill preheated at 400 degrees C for about 20 minutes. Wait till the cheese has melted and is nicely golden brown.

I can’t stomach Parmesan. What other cheese can I use?
For this recipe, you can use cheddar or any other cheese you like.
I can’t find Chesapeake Bay Jumbo Lump Crab Meat in my nearby store plus it is quite expensive. What other crab meat can I use?
If you can’t get the blue crab, look out for shredded crab meat. You can buy a couple of clusters of snow crab usually available anywhere you can get crab. Boil them for 15 minutes and crack those to get the meat out.
